Potato Cakes
Ingredients Method
500 g potato (grated,peeled) Combine all the ingredients except the
500 g sweet potato oil in a mixing bowl. Heat 2-3mm of oil
(grated,peeled) in a non-stick frying pan on high. Place
1/2 cup plain flour a spoonful of potato mixture into the
2 eggs (lightly beaten) hot oil and gently flatten. For a perfect
4 spring onions (sliced,washed) shape use a deep egg ring. Allow a
1 pinch salt crust to form on the bottom before
1 pinch pepper attempting to move or turn them. It
oil (for frying) should take around 5 minutes, each
sour cream (to serve) side, on a medium-high heat. Remove
potato patties from the pan and drain
well on paper towel. Repeat until all the
mixture is used. Serve with sour cream.
Chicken Meatballs
Ingredients Method
1 kg chicken mince In a large bowl, place the chicken mince,
1 cup dried breadcrumbs breadcrumbs, eggs, cumin, chicken
2 eggs (lightly beaten) stock and garlic. Combine well using
2 tsp ground cumin a metal spoon. Roll tablespoons of
2 tbs chicken stock powder this mixture into balls. Heat the oil in a
2 garlic cloves (crushed) frying pan and fry the meatballs over a
4 tbs vegetable oil medium heat, turning constantly using
an egg slice. These only take 3-5 minutes
to cook through. When cooking on the
stovetop, just slice one of the meatballs
in half to check they are white all the
way through.
Frozen Banana Pops
Ingredients Method
8 wooden craft sticks Peel, then cut each banana in half
4 bananas crosswise and insert a craft stick into
1 cup of chocolate chips each half. Place on a tray, cover with
Crushed peanuts, sprinkles or plastic wrap and place in the freezer
coconut for decorating until frozen, about 3 hours. Melt the
chocolate in the microwave, 30 seconds,
stir, then repeat until melted. Pour the
melted chocolate into a tall glass. Dip
each frozen banana into the chocolate
then immediately roll in the decoration
of choice. Place on a tray covered in
baking paper.
