Beef and Guinness Pie
Ingredients Method
2 kg diced beef chuck steak Brown chuck steak in hot oil. Set aside. Cook
3 sliced onions onions and garlic in 1 tablespoon oil until
4 crushed cloves garlic golden. Sprinkle in 2/3 cup plain flour and
1 tablespoon oil cook for 1 min. Return meat and juices to
2/3 cup plain flour pan, add Guinness and beef stock. Bring to
400ml Guinness beer the boil. Reduce heat, simmer for 2 hours un-
2 cups Massel beef stock til tender and sauce has thickened. Preheat
Ready-rolled puff pastry oven to 200°C. Spoon beef mixture into eight
1 beaten egg 250ml ovenproof ramekins. Cut out eight
circles of ready-rolled puff pastry to cover.
Press firmly onto dishes and seal. Brush with
1 beaten egg, place on a tray and bake for 25
minutes until golden.
BBQ Ribs
Ingredients Method
1/4 cup brown sugar Combine the brown sugar, chilli powder, salt &
2 tbs chilli powder pepper, oregano, cayenne, garlic powder and
1 tsp dried oregano onion powder in a small bowl and rub the mix-
1/2 tsp cayenne pepper ture on both sides of the ribs. Cover and refrig-

1 cup barbecue sauce on a platter. Pour the liquid from the pan into a

a simmer and cook until reduced by half. Add
the barbecue sauce. Preheat an outdoor grill to
medium high. Put the ribs on the grill and cook
about 5 minutes on each side, until browned
and slightly charred. Pour sauce on top.
Refreshing Mojito Mocktail
Ingredients Method
1 tbs sugar Muddle the sugar with leaves from the mint
small bunch mint using a pestle and mortar (or use a small
