Slow Cooker Recipes










               Short on time but don’t want to compromise on flavour? Try these delicious recipes!



                                               Spiced Tomato Lamb Shanks

                                               Ingredients             Method
                                               4-6 Lamb shanks         Place all ingredients into the slow cooker and cook
                                               1 jar of tomato Passata  on low for 6-8 hours until lamb is tender
                                               1 jar of Bolognese sauce  If the sauce is about runny mix 2tbs or cornflour with
                                               1 tsp rosemary          2tbs of water and add to your sauce to thicken.
                                               1 tsp thyme             Serve with mash potatoes and roast vegetables of
                                               1 tsp sweet paprika     your choice.
                                               2 tbs Worcestershire
                                               2 tbs dark soy sauce
                                               2 tsp sugar of choice
                                               2 cups of beef stock
                                               2 carrots peeled and chopped
                                               salt and pepper




                                               Spinach and Ricotta Lasagne

                                                Ingredients              Method
                                                750g ricotta             Ricotta mixture
                                                500g frozen spinach (thawed  Mix together ricotta, frozen spinach, feta,
                                                & drained),              parmesan, eggs, parsley and salt and pepper.
                                                200g Danish feta         Tomato sauce
                                                1/2 cup grated/shredded   Mix together passata, dried garlic, dried onion,
                                                Parmesan cheese          sugar, herbs, 1 cup water, salt & pepper to taste.
                                                chopped parsley to taste
                                                2 eggs                   Starting with tomato sauce at the bottom of slow
                                                700g Tomato Passata      cooker. Layer dried lasagna sheets, ricotta mixture
                                                1 teaspoon dried garlic  & tomato sauce. Once the top layer is reached, use
                                                1 tablespoon dried onion  tomato sauce mixture and sprinkle with grated
                                                3 teaspoons sugar        cheese to  top. Cook on low 4 hours.
                                                Fresh or dried herbs to taste
                                                250g dried Lasagna sheets
                                                Grated cheese to sprinkle on
                                                top



                                               Famous Fudge (Redskin version)

                                               Ingredients               Method
                                               1 tin Condensed milk      Melt all together in slow cooker on high. lid off.
                                               2 white chocolate blocks  Stirring every 10 mins for 1.5hrs.
                                               (approx. 500-600 grams)   Once combined and mixed, pour into pan lined
                                               1 bag Redskin lollies     with baking paper.
                                                                         Freeze one Redskin overnight, remove from
                                                yum!                     Refrigerate for 1 to 2 hours until set.
                                                                         freezer and smash it up to sprinkle on top.
                                                                         When set, cut fudge into your desired size
                                                                         and place them into an air tight container and
                                                                         refrigerate. You can use anything you desire for the
                                                                         flavouring. Mix it up and use banana lollies, musk
                                                                         sticks, licorice allsorts, anything you can think of!
                                                                         Replace the white chocolate with milk chocolate
                                                                         and be as creative as you can!
